I mean i have made some yummy vegan stuff before-- it is difficult though.

There are lots of things that can replace eggs. I was going to link a list but for some reason every image file is too large. I suggest a google search of "Vegan" "replace eggs" or similar. There are plenty of natural options: flaxseed, peanut butter, banana, apple puree, chia seed among others and some commercially prepared ones as well.
If you are going vegan, it might be time to go to a vegan dedicated site for a better chance to get quality advice from actual vegans who have been at it a while.
Quick meals that take minimal time to prepare are things like:
Cooked beans from a can, wholemeal bread (check the ingredients) and whatever vegetables you like.
Rolled oats (minimal cooking time with hot water) with banana and/or other fruit.
Flash frozen corn, green peas and commercially prepared potato that only need to be steamed for a few minutes
GABA rice (this is normally not sold in the West unless you live in Japan) but you can make your own with organic brown rice (that hasn't been heat treated) if simply soak overnight. It greatly reduces cooking time.
Peanut butter (or other nut spread) on wholemeal bread with or without jelly is an easy quick way to fill up.
Steam your own potatoes and freeze for reheat when you want them. Reheating them with a steamer takes only a few minutes.
Those are some of the things I do, and I'm vegan. Of course I use various spices and flavorings that aren't listed here to make things more interesting. If you pay attention to how some of your favorite products are spiced, you can use these combinations in your own prepared meals.
