This "missing time" is accounted for by Paul in Gal. 1:17, "Nor did I go up to Jerusalem to those who were apostles before me; but I went away to Arabia, and returned once more to Damascus."

I'm not sure if it meant Arabia the place, or just a place of Arabs where there weren't any Jews. Paul needed to get away from his old zealous life of violence against Christians. He needed to spend time in the Presence of the Holy Spirit to get a renewed focus and a clearer revelation of the Lord's call on his life.
I've heard Paul compared to Elijah, whereas Elijah killed prophets of Baal with zeal and then had a conversion of sorts when he was running in fear for his life from Ahab & Jezebel. Elijah then met with God's "still small voice" and was changed.

What I did not like about meals as a child, was having to eat everything that was on my plate! No dessert if I did not. But I grew to love vegetables that way, so long term it was all good!
