Sweet potato hash
(I'm not really a recipe person, so most of these measurements are very rough estimates)
ingredients:
1 tsp vegetable oil or cooking spray
one sweet potato, diced (I dice mine quite finely to speed up cooking time)
1/4 cup diced onion
1/4 cup diced bell pepper (color of your choice)
1 egg (optional)
1/4 tsp cayenne pepper
1/4 tsp papeika
1/8 tsp brown sugar
1/4 tsp garlic power
salt and pepper to taste
Heat skillet with oil/cooking spray over medium heat
fry sweet potato until lightly crunchy on the outside (I like to lightly steam mine in the microwave first to ensure a fluffy inside, but that's just personal preference), remove potatoes and set aside
add onions and bell pepper to the pan, cook while stirring occasionally until tender
add potatoes back into the pan
add cayenne pepper, paprika, brown sugar, garlic, salt and paper
(optional egg) here are two ways I like to include an egg:
- push the sweet potato hash up around the outer rim of the skillet, creating a well in the center. Scramble the egg in a separate bowl and pour into the center of the skillet. Wait for it the egg to begin to firm up slightly before "hashing" the entire mixture (sweet potatoes and all). The result is a gently but fully cooked egg mixture thoroughly dispersed throughout the hash.
- cook the egg according to your liking in a separate skillet, serve on top of sweet potato hash.
