Wanted to ask a question. Somewhere i read/saw abt veg recipes with coconut milk, but cant locate it now. Its quite common here with local vegetables (moringa, banana heart, jackfruit, pechay, etc). But let me ask for those who cook with it, i was wondering if are there temperate vegetables that quite match or go with coconut milk?
If you can get a costco membership, they have huge bags of frozen fruits and veggies that are delicious. They have bargains on Mac and cheese too as well as organic pastas and breads. The rotisserie chocked are a great heal too, since you can eat it as it is, or add it to soups and such. Protien is great for making you feel satisfied.
I've added a can of tuna (drained) to Mac & Cheese and it was surprisingly good. I've also added hummus and tabasco.. though not at the same time as the tuna.

my husband made some buckwheat pancakes and used coconut milk for the liquid
and they were exceptional -
we love the organic coconut milk, it is a great cooking aid.
we also use the organic coconut oil as a moisturizer and it can be mixed in with other
natural ingredients to make a wonderful skin lotion.
along with the coconut milk, we also make our own 'oat-milk' and 'almond-milk' -
it's very easy and our insides love them as they are 'chem-free'.
my husband makes his own cereal and the 'green-milks' are very tasty and nutritious.
as long as no pork (a lot of hot dogs are contaminated)
see "God's Key to Health and Happiness" by Pastor Josephson (Baptist I think; told to get his things in order to die - from prostrate cancer I think; lived another 50 plus years just went to be with the Lord a few years ago; his wife still has available the book online. )
His diet changes eliminated cancer AND most other diseases, as Promised by Yahweh in the BIBLE, as it has in millions of people.
a wonderful 'health-book' that we discovered many years ago and found many
of the remedies worked very well for us is called - "Back to Eden by Jethro Klaus",
a really great book written by a man that loved the Lord and the Lord's people -
his driving force was to see his fellow man healed, a rare thing.
also another that we have used for years is called, "Vermont Folk Medicine",
most of the recipes involve 'apple cider vinegar' - a must for maintaining
good health for humans and animals.
cool, great ! (i have all three) the book folk medicine was God's Key for me to escape the terrible druglords industry. it works !(His(God's) Way) .... over ten years time most people are able to totally eliminate disease (most, not all) in their family.

and,,,,,we commend you sister, BUT, going 'green' is an option
that our Father has given to us, for our health and longgivity -
I say, go healthy and go well into the future that our Father
lays out for us,,,,,
here it's 9:20 am in the morning, the day is already started and not close to noooon, yet....
homemade yogurt is great yum yum. (haven't made in decades, but it is so much better than storebought.....)
hope to start again, and a few other things (like homemade bread).
point of order: look up soy the terrible bean.
(it has caused more illness in the world.... 1 out of 4 people sick from it..... i.e. soyprtein has very nasty effects on the body)
(yes, it is sold as a 'health food' , at health food stores, and as baby formula, prescribed by idots..... it is very bad )
many years ago my husband and I made our own 'soy-milk', the
real 'old-fashioned' way.
it was a lot of work, but we lived, and enjoyed the milk in/on many
different ways.
the benefits of exploring and utilizing the 'old-ways' of preparing things
are many, it just takes it being a priority and the desire to be healthy
and maintain a healthy body and attitude.
stepping out of the world and stepping into a healthy life-style is sure
evidence that our will is to take care/control of ourselves after a
Godly manner with Godly recipes available to us through Godly men and women.
