Servers have a minimum wage that is half (or less in some states) the actual minimum wage. Their income is what they earn in tips. If the service is poor, I tip 15%. If it is good, I tip 20 to 25%.
My friend owns a nice restaurant. He avoids this type of situation by adding a 15% gratuity to all party tabs and take out orders over $100.
