Why did God create such a big universe?
I think there are probably multiple reasons. But, I would say one is to show us that HE is GOD. If the universe is that insanely and incomprehensibly amazing, how much more is He?!?

What's big to us is minor to Him. He's omniscient so doesn't see limits on space. Actually going back to the beginning of Creation is so vast, it's hard to imagine. This video gives and idea of how vast and far back the beginning of Creation is:

The number you used is miniscule. God's handiwork is no longer available for viewing due to mans' pride in his own 'technology'.
There are approximately 200 billion trillion stars in the universe. Or, to put it another way, 200 sextillion. That's 200,000,000,000,000,000,000,000! The number is so big, it's hard to imagine.Oct 4, 2021
According to Flat Earth theory, the sun is much closer and the universe much smaller. Also, the problem of light reaching the Earth from the stars and sun within a day (as indicated in Genesis 1) is resolved. I suspect (globalist/heliocentrist) scientists are claiming the "universe" is much larger than it actually is.

The Earth is still huge, but that is the focus of God's creation (i.e. being home to man), not some random "planets" and "stars" a gazillion light-years away.

I think the universe is so big because God says to us: Here I am, unimaginable big, beyond your understanding. I gave you free will to accept me or reject me.

No, it definitely does not state that, clearly or otherwise.

It says that the lights in the heavens are for seasons, days, and years. They are merely the markers we use to measure and count time. Time itself existed back in verse 1: In the beginning, God created the heavens and the earth.

Markers meaning events? If that’s the classification or definition of Time then I agree.
On a universe where no events happen, Time is meaningless.

Seems the Bible indicates just that God's 'time' we can not comprehend now but our time is limited and we have three score + ten years.

I'm sure Hugh Ross is aware of all that, he's a learned Christian astrophysicist. The video is amazing in it's capturing of massive galaxies, stars et al going way way way back in time, toward Creation.
