I've been roasting big trays of chicken for the freezer over the past 2 days, but had leftover spaghetti for dinner. 😁

Spaghetti is one of the few leftovers that I enjoy. I love chicken. We had chicken and dumplings a few nights ago that turned out well.

do the oats help hold it together better?
Seems like lately my meatloaf (with bread crumbs) has been super crumbly. It's good, just comes out of the pan more like sloppy joe style meat than a loaf. Same way I've made it for years, so I dunno whats going on.
Besides the oats I also put two eggs in mine and I have found that if you let the meatloaf rest 5 or 10 minutes that it will slice better and not fall apart as quickly.

dunno, maybe I'm using to much of something. I use at least 1 egg.
Meat loaf is something I just always threw together, little of this, little of that, adding more egg or crumbs as needed.
There for a while it was becoming to dry, then it was becoming to crumbly (like sloppy joe) so I've (tried) to stop making it, but fam is requesting it again and I'm dreading it.
This is what I do.... a package of hamburger meat, 1 can of diced tomatoes, onion chopped, green pepper chopped, a cup or more of quick oats (the kind that needs to cook a little bit not the instant oats), 2 eggs, Italian seasoning, salt, pepper, garlic real minced or powder, mix all together really good then put a bit of ketchup on top spread it around on the top and put in oven 375 degrees for about an hour. Let it rest 5 to 10 mins then slice and serve.

We were brought up like that, since my dad worked a swing shift, two weeks days and two weeks nights.

When he was home for the noon meal, our evening meal was supper.

And when he was home for the evening meal, that was dinner.

For dinner I am having linguine with a mixed tomato sauce
to which I added grated carrots, zucchini, and white onion :)
Sounds delish....

I will put shredded carrots and shredded potato in my meatloaf when I make a mushroom gravy instead of the ketchup. That is another good version of meatloaf to me too.
This has been bugging me ever since I read it, and I finally figured out why. Meat, carrot, potato, mushroom gravy... It's basically a pot roast baked into a meatloaf.

5 minutes and my Salisbury steaks, smashed potatoes, veggies, gravy and rolls should be done.

I fixed a recipe from Brenda Gantts Cook Book It's Gonna Be Good Y'all Yellow rice casserole. We also had air fryer chicken for dinner tonight. You should check out her cooking on FaceBook called Cooking With Brenda Gantt. She is a sweet old lady from the south in Alabama and the neat thing about her other than her friendly personality is that she will share the Bible and talk about Jesus when she is cooking at times.

She just started FB not that long ago and became an influencer pretty quickly.... been on TV a few times and wrote a cookbook... You might want to look her up and watch a video or two....

Finally finished up my leftover spaghetti tonight. I just can't stand having food go to waste.

The good news is ... I made chocolate chip scones today. 😁

Meal plan for weekend and next week:
Saturday lunch: Steak with baked potato and brussels sprouts
Sunday lunch: Fried chicken tenders and potato wedges, with lettuce wedge salad
Weekday Lunch: Chicken curry with rice
Weekday Dinner: Black bean tacos

During weekends, we only have one major meal and a small snack in the evening. However, during weekdays, we have two smaller meals. No breakfast.

Tonight I went on strike... Daughter Melisa put a pizza in the oven for us. Chicken, vegies and white sauce. Jerry didn't like it but I thought it was pretty good and I didn't have to cook so for me it was great.

Yeah, no, forget that. You say no breakfast, I say no comprende senora. :p Breakfast is THE meal for me.
