I have 10 siblings, 9 of which are living at home. They all LOVE muffins, but I found them so hard to make because all healthy muffin recipes make only about 12 muffins (definitely NOT enough for my family!). So, I came up with my own recipe, and all my siblings fell in love with it. I thought I'd share it, so, here it is!

Ingredients:
1 1/3 cup mashed bananas (about 3 medium)
2 eggs
1 1/4 cup milk
1/2 cup oil (any kind works)
2/3 cup honey
3 cups whole wheat flour
3/4 tsp. baking soda
5 tsp. baking powder
1/4 tsp. allspice (optional)
1/2 tsp. cinnamon
1/3 cup cocoa
Optional: add 3/4 cup chocolate chips, raisins, or your favourite nuts

Directions:
Preheat oven to 375F and prepare muffin pans (you will need enough for about 30 muffins). Mix dry ingredients in a bowl. In a separate bowl, combine eggs, milk, oil, honey, and mashed bananas. Form a well in your flour mixture. Add wet ingredients and mix until just moistened. Spoon into muffin cups until about 3/4 full. Bake for 18-20 minutes, or until toothpick inserted comes out clean. Enjoy!

Sounds delicious, Ankagirl! Do you know that you can substitute the oil in any recipe with apple sauce? The oil will not be missed, and apple sauce is healthier for you! I hope you try it sometime :D You will not be disappointed :) You could even use a bit more apple sauce than the amount of oil that is called for ;)

Do you cook bacon? Do you ever pour off the bacon fat for use in baking?

My mother used to save some to use in baking oatmeal raisin cookies :D

I just phoned my closest sister to check with her about this, wondering- if the full amount of oil the recipe called for was 1/2 cup of oil, if 1/2 cup of bacon fat would be used; we were in agreement that that seemed unlikely. She suggested it was probably more like half bacon fat mixed with whatever other oil choice, whether butter, or vegetable oil, etc :) We both remembered being somewhat horrified to discover that left over bacon fat was being put into our cookies, and we ate those cookies very carefully the next time to see if we could tell, and really? We could not :giggle:

That's funny!
I do save my bacon fat, but normally I use it for scrambled eggs and frying rice. All my siblings love the extra flavour!

I made these again today. This time, I omitted the cinnamon and allspice, and added 2 tbsp of instant coffee. I found that it added a really deep, rich flavour to complement the cocoa. I suggest y'all try it as well!

That bacon thing that @Magenta suggested sounds yummy tool. Maybe some bacon crumbles for the breakfast muffins.
When I read your comment, I had to go and check to see if you were a guy. It seems that all men LOVE their bacon! :)
It's a good suggestion, though. I'm sure my brothers would love it!

If I heard about this from one of my meat-lovin' brothers, I'd probably laugh and think, "Oh dear, those boys." But this actually looks AMAZING!!! Is there a recipe for this?

It looks pretty straightforward... :D 1. Fry bacon; 2. Dip in melted chocolate; 3. Add desired toppings :)

I have never tried it myself, but I do suppose that die-hard bacon fans would be over the moon about it :giggle:

Skewering the fried bacon looks like a good idea, also :D

Nothing at all, eh? You obviously are not paying attention at all, since bacon was introduced into the convo in post #3, and the majority of posts since then have been about bacon. Yes, Jann Arden is/was an amazing singer/songwriter/musician. I say "was" because it is her earlier work that I am most familiar with; I have seen her five times in concert, and met her in person in the late nineties. The first I became aware of her was her second recording, Living Under June, which had Good Mother, Could I Be Your Girl, Unloved (with Jackson Browne), and Insensitive on it, among other greats. Time For Mercy had been released the year before, and I soon had it also, which had I Would Die For You on it. I played her a lot at work, and a co-worker, without fail, would always yell at me to urn it down when Jann got to the yeah-yeah-yeah-yeah-yeah-yeah-yeah-yeahs LOL :LOL: Jann owned a restaurant in her home town, but I think it may have closed down once her younger brother, who was helping to run it, started a family. Her older brother has been incarcerated for murder for many years.

Well that was a weird dose of trivia, I almost know the entire family of Jann Arden now. Anyways, my family is the children of God, so I guess I am related to mrs Arden if she is a believer. I do not know. I also used to play the songs you mentioned at nachspiels in my past life, good times. Nice song to slowdance to, good memories. I will check out if she has any christian songs, but not reading up on her trivia today. It is sunday, so only wholesome stuff and good news. No place for murders on sunday of course. Or excess of any kind, like the foodthing, that is gluttony. Not doing that.
