One thing I notice is that I never have been good at maintenance or balancing plates. I know that no one is perfect, but it seems like many mature Christians I know have found a way to keep up with life as opposed to letting it take over. Do any of you more seasoned Christians (or anyone who has found ways God has helped in that balance) have any tips for us more reactive Christians?

Do a lot of prioritizing with your schedule and your plans.

This helps you to control events, instead of letting them control you.

Prioritizing things is biblical.

I would follow Maxwell's counsel. I believe that the balance consists of being reactive and pro-active. Yes, there is a physical and spiritual balance. Tip the scale too far and too long one way or the other and you will either become burned out or desensitized. I have been in both of these conditions and it is definitely not spiritually and physically heathy. Neglect both reactive and pro-active and you will begin to die in both a spiritual and physical sense.
