I find it interesting a plethura of people use Colossians 2 to say it's wrong to celebrate or observe the feasts or someone on their diet.

Read the scripture.

IT STATES DO NOT JUDGE ONE BASE ON THESE THINGS. It doesn't state, do not do these things.

Which means if one does follow these things, do not judge them.
If one does not follow these things, do not judge them.

How is her decision unprofitable. Unless I'm missing something in what she has stated.
All I see is she's learned about the feasts and wants to observe them and learn more.
She believe's in following the 10 commandments.
And she wants to learn more of this, and get into a closer relationship with God.

IMO all that information there is profitable. 100% profitable.

There is a lot knowledge and insight to learn/gain in that.
IMO observing feasts is not going to help her know Christ, even though it might make her feel good and special, or whatever. The festivals are very profitable to know about, but that is accomplished through study and prayer.

The lord's supper is the memorial we really should focus on because that proclaims the death of Christ and is something the lord said to do. That would be far more edifying for her to observe, IMO.
