What's a left-over?

See, sometimes the food doesn't make it to leftover stage - and by golly by gosh, wouldn't you know those are the nights I intentionally make a lot of extra so that there will be left overs so I either don't have to cook another night or so that there is a head start to turn one dish into something different?
My wife does the same thing, makes extra to avoid cooking for a day or two. I occasionally do the cooking too. Basically, she may prepare one meal a week and I prepare one meal a month. The other days we eat salad or sandwiches or microwave a frozen meal. This system seems to be working.

No, I only prepare a meal once a month. This meal typically will have no leftovers. It's a one and done. In Florida we lived 2 miles from Cosco. Went there often. In the small town that I live in you have to drive over 100 miles to the nearest Costco. That's not gonna happen. I miss that store.

My nearest CostCo, the only one in New Zealand, is 7.2 kilometres away or 14 minutes away by car.
