So you need a good name for a bakery/coffee shop? This sounds like a job for a forum thread.
We finally have one based in part on Psalms 23:5.

And good Sourdough starter is a relay of several generations and types of wild bacteria coming from various yeasts in the grains. One type growing results in another coming forward and becoming more prevalent. Acids, alcohols, sugars. Starches, and proteins affecting everything.



I've started a second batch to see which gets there first. One keeps getting pineapple and the other has water. Both have a blend of rye and whole wheat. I'm betting that the pineapple juice gets there first even though the water appears to at the moment.

Some bacteria forms gas and some produce the acids. I'm looking for that perfect Sourdough flavor.

Eventually I'll be able to feed it all white, sterile flour and water and the flavor won't change in the least.

Sourdough starters need a minimum of ten days to two full weeks to mature to the point of first usability. Then it takes years to fully mature to keep from going off the rails.

I'm going to try some Sourdough English muffins this weekend.

Depends on what you put in the bread dough itself. Feeding the starter that wouldn't affect the bread nutrition value much, because the starter is only one ingredient in the final bread dough.

Good question though, one that a baker needs to ask.

All this talk about "feeding the starter" and having to carry it around with you like a baby for subsequent feedings makes me think of the scene in "Lake Placid" when Betty White feeds a whole cow to a giant croc:






And I'm starting to think that those sourdough starters are even more ravenous, not to mention demanding, than the crocodile!

Nope....you are going to eat the little bacteria that ate the flour. It will make the bread more digestible for some people....not those with a gluten allergy.


It won't even change after a while because as time goes by it's just a bacteria culture that keeps eating, multiplying and making more gas and acids.

Actually....
My starters are in the next to last stages where it eats a lot of the proteins and becomes "soupy" after it eats up the starches.

The last stage is where it's viable starter....making nice breads all the time through slow fermentation.

I can see it now, John is going to be going to the grocery store and loading up on T-bone steaks, all to feed his starters.

He'll be ponying up the dough to feed, well... his dough. :eek::geek::cool::coffee::LOL:

And NOW I'm starting to think that what he's creating isn't REALLY bread, but The Blob!



After all, you said it eats PROTEINS, and PEOPLE are made of protein! o_O

I'm sure if we got him to admit it, John is probably actually concocting a "special starter" -- that's specifically reserved -- as a means of dealing with unruly customers. :cool:

He'll let it loose on all those people who try to sneak another refill without paying. :alien:

He was the 13th....but since you don't count the first one we say there were 12.

There was no tribe of "Joseph". But we had the tribes of Ephraim and Manasseh (actually East and West)

And since we don't count Levites....there are actually 13....14?

I forget....I'm thinking about too many things.

Not quite....both half tribes of Manassas as well as Ephraim.
There are Twelve names inscribed mentioned in the Word, not thirteen. Of course the two half tribes make up the one tribe of Joseph.

Try actually counting them.
List them out on paper. Writing each name next to a number....then get back to me. I know what is routinely said and repeated so many times ad nauseum....people take it as fact when it's simply not true.

"Well, they are a bit lazy and let others tell them things instead of fact checking for themselves. "

There never has been only 12 Tribes. And a great case can be made for 14.

Actually sourdough starter bacteria don't eat protein....they first eat starch and turn it into sugars which are then consumed by other bacteria....and with the right enzymes the sugars last long enough to be sweet tasting to the bread consumer.

Currently, my sourdough starter is a bit on the sour side....too sour! I'm going to try it as just a flavoring agent when I get compressed yeast in.
I made some more sourdough muffins yesterday and it was again very sour. That starter of mine needs to mature some more. Had a bit of an off taste at the end too.
So more testing, trial and error and testing some more until its right.
Eventually I'll get it close enough to sell....I'm gonna have to work on it every day.

Rev 21:12 And had a wall great and high, and had twelve gates, and at the gates twelve angels, and names written thereon, which are the names of the twelve tribes of the children of Israel:
Rev 21:13 On the east three gates; on the north three gates; on the south three gates; and on the west three gates.

Please do not continue to try convincing others there aer not but Twelve Tribes, for this is contrary to the Spirit and Holy Scripture.

Which is more than 12....always has been and always will be.

And when asked I'm going to explain the symbolic nature of the phrase and the numbering....which is very different from the literal.
