I now have an apprentice. Shes willing to work for free for the experience and morning tea was put on, she was presented with a slice of fruitcake. She looked at me helplessly and so I relented and had half.
I have resolved to go dairy-free but it is especially hard at this time of year when everyone is bombarding me with milk chocolate. I checked the label and its all now made in Australia, or specifically, Tasmania. Sacrilege. Our own dairies cant even stock the local product.

Regular chocolate and not milk chocolate is dairy free....milk chocolate is not chocolate anyway....it's chocolate flavored milk taffy in truth.
So normal chocolate is just fine to be dairy free.
Nz is the land of milk and honey but mostly milk. It sent powdered milk to China, got contaminated and babies died.
Cadbury has now moved to Australia.
I cant stand white chocolate I dont understand how people can eat it.
There are dairies on every corner street of NZ but they may be slowly being replaced by...Starbucks. I hate starbucks lol Their milk froth makes people go weird.
People dont give out elephants for Christmas. Its mostly milk chocolates.
Or, those Griffins box of biscuits or danish cookies in a tin. You are starving for real food at Christmas time and all people give you are chocolate biscuits. lol

Apparently I have been scheduled to do a demo on how to make chocolate truffles for a group at my church soon.
This should be interesting....
But after I'm finished I doubt there will be any evidence that I was there. The audience will eat it all up.
There are varying grades of white chocolate...it depends upon how much cocoa butter it has within it and how it is flavored.
Yeah, most white "chocolate" is just sugar and vegetable oils, maybe a bit of artificial flavoring.
There are some good white chocolates out there though. I recently found Moser Roth white chocolate with madagascar bean vanilla. Yum!

No I did not get paid by either Moser Roth or Aldi. I just like the taste.
Is cocoa butter made from cocoa or is it just cocoa powder mixed with butter?
I dont know much about how to make chocolate. Its just there...or given. Nobody has ever said heres a chocolate plant/ cocoa bean make your own.
Apparently needs copious amounts of refined sugar as well get rid of the bitterness.
I would just chew some sugarcane or eat sweetcorn if I wanted something sweet. You got to a supermarket and but all their fruit is picked when it ISNT ripe, so its all sour. What a waste.
