then what's with Paul, a devout Christian and apostle, who not only taught about walking in the Spirit, but did walk in the Spirit, say that he does evil that he knows is wrong? That is the definition of sin.
That is a pretty easy answer saint. Paul says that in his flesh he cannot do what he would like, for in his flesh there is no good thing. That is why we need to walk in the Spirit and not in our own flesh so that we can live perfectly.

I don't, but you said that those who are saved walk in the Spirit and therefore do not sin, but Paul admitted to sinning and struggling with sin constantly. which would make him not saved.

No he admitted that in his flesh he could not do what was right. That is why he kept his flesh in subjection, and walked in the Spirit. Which is exactly what we should do.
Striving for perfection is like driving by watching the lines. Doing so does not help you keep on the road because you are looking in the wrong place to know what the path is. If you keep your eyes on Jesus, it is like driving by looking ahead. Fix your eyes on Jesus and grace will keep you on the right road. Fix your eyes on perfection and you have trouble.

Well I wouldn't disagree with that. If we stay focused on Jesus, and walk in the spirit we will live sinlessly. Trying to be perfect in and of ourselves is useless, as saint has pointed out per Pauls writings in Romans 7
His flesh does, when he is in the flesh. However he also states that if we walk in the spirit we will not fulfill the lust of the flesh, but that we could indeed fulfill the law.
