Sometimes something like this: I only believe in marriage once, so I take it too seriously to rush into anything, picky, etc. etc. Ask God.
I should probably consdense that to: Ask God. ha.
Otherwise it could just be something like: Well, I'm just living the single life. yadda yadda....
I also might say something such as "I'm fine with how things are" if the person asking is someone I think is going to try to hook me up with their 3rd cousin's best friend's sister or something like that. NO thank you......unless she really really loves God, music, cute and all that stuff...but I'd still be very very reluctant..
Most of the times I've heard it, it was intended as a compliment.

If we are speaking in the context of a potential relationship, I always tell them that God has not shown me the right one yet. I ask myself this from time to time and then remind myself that technically I could have been married four times by now ... but I want to be married ONCE - not FOUR times! LOL. When speaking to someone who is just curious, I tell them I am biding my time in God.

TurtleShell, I am a staunch advocate of this not being a smart thing to do, I think it deception IF the guy asks you questons and you lie. Just saying, I am not trying to be mean here. The Lord leads.I just think that a good Chrstian guy will VERY quickly ask a girl he likes something of God, and, a thread I did a while back pretty much proved that fact with about 95% saying 'yes' to letting a girl know within the first minute, or, five minutes, or, for sure by end of the time they FIRST meet. This is NOT talking about going out on a date for the first time, just a chance encounter at a supermarket or library, or somewhere (unlike christian chat) that you could assume they were a christian, or, like church, too, but still I would ask and then it is the girls job to....
answer YES ! to their asking, in some way, cute, clever, or forthright, 'Do you believe in God?'

erika, funny thing...I don't think there's ever been a time when I have seen a woman behave like those you've described above that within a few minutes didn't begin to complain about things her husband did/didn't do. Have you heard this too?This usually just makes me smile to myself and leave them wondering why.
