oh...Florida! can you add oranges to mac and cheese? (ewww)

when the kiddos were small, i made casseroles, and Mark said,
casseroles are for poor people.

and i was like, honey? we are poor people! lol

so, if you need a casserole recipe, i'm your man.
(can't promise the healthy part, tho. :) )

There are SO many healthy things you can do with Kraft Macaroni and Cheese!!!!

Here is my recipe for the healthiest mac makeover.

1. Cook up your mac and cheese as usual
2. Put ALL the mac and cheese into a big bowl
3. Get out a second big bowl, that is completely empty.
4. Fill the second bow with some other kind of food.
5. Eat the second bowl.

There is 'better' and then there is 'palatable'. Only cheap veggie I know is lima beans and that sure ain't gonna be part of the recipe.

I'm not much for eating processed foods, since I pretty much grow almost all I eat now, and I can't say it's the healthiest, but I like to add tuna to mac N cheese? When the girls were smaller, I would make the mac n cheese like normal, add tuna and peas and mix. My girls (now about grown) say chicken and corn added is good too, but I haven't tried that.

i used to be able to find yummy (all natural!) parmesan risotto in the market.
add some tuna or ground beef, veggies of your choice,
omit biscuits with a ton of butter and voilá!
i have to order the risotto from Amazon, now...much pricier, but still delish)

(srsly...the people in this house eat like that and are thin as rails!)

Raw foods.

Veggies.

Sweet potatoes.

Eggs. (most bio-available protein to the human body)

Brown rice cooked in broth.

Fruits.

Moneysavingmom website had an article on how you can buy organic food on a budget its doable but you have to be prepared to do the hardwork ie they suggested freezing leftovers . moneysaving mom is christian too.

When you are in a bind:
Eggs for protein. Can be boiled, fried, scrambled. Mix with a little butter, salt, pepper, maybe cream or milk.

Frozen veggies. Avoid Corn, and too much carrot. Go for green beans, peas, spinach etc.

Get in a habit of having cheap frozen veggies in the freezer, and heating up a small amount at dinner.

Avoid canned meat. Look at the price per pound and you may find canned meat is dearer than real meat.
