While it is true that I love meatloaf, I'm a purist and prefer it to be shaped into a loaf pan, then turned out...not used as a medium for sculpture. No giant's feet...no bacon-wrapped babies...just a loaf.

And tonight it really is meatloaf. Hopefully I don't regret the whole I'm going to try cooking it in the crock pot thing. On the bright side, my meatloaf is really truly mostly meat.

Well it probably beats what I had for breakfast. Or rather, the opinion most people will probably have of what I had for breakfast...

Yesterday I took a blender to a can of kidney beans, then I mashed in some cheddar cheese and a bit of mayo. I spread that on bread and called it breakfast.
Today I took the leftovers of that, mashed in four hard boiled eggs, added some dill pickle juice to loosen it up, spread that mess on bread and called it breakfast.

What? It was delicious! Don't judge me...

It would depend! I'd probably ask him how fancy he wants it to be.

Easy for me usually involves spaghetti and sauce, or fried potatoes with a veggie and dip side. I could make some cookies, too :).

Slightly more fancy I might go with chicken and rice, with some sort of bars or a cake for dessert. (I'm a start-from-scratch kind of gal, so if you fancy instant rice or boxed cake, I guess you'll have to go elsewhere).

REALLY fancy all-out I'd have mashed potatoes, beef steak cooked to order--please not extra rare, gross--(marinated in a 2-day red wine marinate!), dill carrots, sparkling grape juice, and dinner rolls. I'd top it of with coffee and my favourite Turtle Trifle. Sorry, I didn't make the sparkling grape juice :(. lol

For a person used to rotten fish and liver mixed with rice pudding, this sounds delicious. Speaking of which. October is coming. And with October comes the rakfisk season. My friend is coming over this weekend. Guess what is on the menu? Oh Happy day. I am actually feeling happy.

I'm making something I picked up from the local grocery store's meat counter. It's called an Italian Pinwheel...*shrug* It's pork loin, laid out, then lined with hot Italian sausage, pepperoni, provolone cheese. Then the slices of that are wrapped in bacon.

Sounds like something a fat dude like me don't need to be eating, but "The Picky Eater" in the house wanted "something with some flavor for a change instead of this bland, healthy crap". Trying to please the palette of an old man is about as bad as trying to please the palette of a spoiled rotten toddler.

Iowa is very fortunate to have a local chain of stores - Fareway. They have the best and broadest selection of meats I have ever seen in a grocery store, and they do a lot of custom stuff...their own sausages and brats, their own wrapped and stuffed chicken breasts, the Italian Pinwheel thing-a-majobbie, lots of other stuff.

You have no idea what you are trading yourself into...

You cook the rice with milk. Season it with salt, white pepper and all spiece. Then you add minced pork liver and stir. Adding some raisins. Put the whole thing to the oven to let the liver coagolate. Add a click of butter (as my mother in law always did) and serve it with potatoes. Still not wanting to try the rakfisk instead?

Today I serve roast of lamb and waffles to desert. Perhaps that is a wiser choice.

But sometimes we have a vegetable only/meatless dinner such as baked acorn squash, sweet potatoes with sour cream, baked potatoes with butter, chives, sour cream, garden salad, vegetable tray, etc

Pinterest and YouTube are excellent ways to find great recipes.
