Chinese cook everything. Rice must be hot. Fish must be whole, steamed or fried. No seaweed, we have sea cucumbers. If we are to roll anything, it would be deep fried spring roll or a steamed rice roll, with shrimp inside, doused in soy sauce (not the little soy sauces in those plastic fish bottles) and no Kikkoman, it has to be Pearl River.
Fish if it has any sauce, would have black bean sauce, and must have fresh ginger and spring onion garnish. None of this pickled ginger/wasabi combo. If the sauce has to be hot/spicy, it will be some chillis in soy sauce on the side.
All dim sum is steamed. It is not served cold!
